Grilled Shrimp and Steak

So many times we think of surf and turf as lobster and steak. However, substitute the shrimp for the lobster and it is just as tasty. You can add any of your other favorite vegetables also.

Ingredients:

  • 8 Small to medium red potatoes
  • 6 Carrots
  • 4 to 6 Fresh corn on the cob
  • Jumbo Shrimp (4 to 5 per person)
  • Filet Mignon, T-bone, or Strip steak (one per person)
  • Bunch fresh parsley, snipped
  • 2 Lemons
  • Olive oil

Directions:

1. Pre-heat your grill on high heat.

2. Quarter the potatoes.

3. Peel the carrots and cut into 1 inch pieces.

4. Remove the husks and silk from the corn and break each ear in half. Place all in a large microwave safe baking dish, sprinkle with olive oil and cook on high for 3 to 4 minutes.

5. Rinse the shrimp and pat dry. Place shrimp and vegetables in a grilling basket and place on the grill. (It’s easier to peel the shrimp after they’ve been cooked.)

6. Cook the steaks 3 to 4 minutes per side for rare, 6 to 7 minutes per side for medium to medium-well, depending on the thickness.

7. Peel the shrimp before serving and garnish with parsley and lemon wedges.
